All wines are from a single organic vineyard, at 300masl in Canowindra, NSW. Planted in 1997 by the Statham family, these 10hA of vines have never been sprayed with synthetic chemicals or fertilisers.


Acid Chardonnay


The Chardonnay grows on a gentle east-facing slope of granite and clay. A cooler aspect in a warm, dry region that provides a balance of ripe fruit and acidity. The wines sees fermentation in tank followed by 12-24 months ageing on fine lees in 5-year-old François Freres barriques, topped regularly, no racking or stirring. Bottled with 30mg/l SO2.

Apple, peach and green almond nose with a creamy, broad, palate of pastry and marzipan balanced by a keen acidity. 


Acid Vermentino


The first wine we ever made in 2017, far from the insipid overcropped versions from heavy clay soils, this is true Vermentino totally at home in this warm, dry climate and sandy granite soils reminiscent of the grape’s native northern Sardinia. Destemmed annd left on skins for a few days without any punchdowns or pump-overs, then pressed to a mix of clay amphora and neutral oak for 12 months. Bottled with 30mg/l SO2

This wine when young exudes fresh stone fruits, citrus and a salty, mineral palate. With age it gains a deeper hue, and the fruit turns toward dried apricots and spice. 


Acid Rosé


Direct pressed Shiraz, aged half in tank and half in ceramic egg. The light pink colour belies the depth of fruit flavour, concentrated apple and watermelon, with fresh acidity and a savoury, rose petal note in the finish that creates a balance between the complex and the delicious. Bottled with 30mg/l SO2
