All wines from a single 10 hectare vineyard, near Canowindra in the Central Ranges of NSW about 40 mins from Orange. They're grown by Sam Statham, who we've been working with for a decade now. Sam planted the vineyard in 1997 and has been managing it organically and biodynamically since its inception, never once using a synthetic or systemic chemical. Over the last 30 years, his work on composting and soil building has transformed a heavily eroded granite hillside into an organic paradise; the soil's health is directly reflected in the fruit density and vivacious aromatics.


Acid Chardonnay


100% Organic Chardonnay from Canowindra NSW. Grown on a gentle east-facing slope of granite and clay. This wine sees 12 months in neutral oak barrique, on full lees, then racked once into steel for 6 months before bottling. This is a classic Chardonnay profile of butter, pastry, peach and white flowers, a richness and creamines from the lees that is offset by the acidity of the granite. 13% ABV. 


Acid Vermentino


100% Organic Vermentino from Canowindra, NSW. A particular combination of dry continental climate and sandy granite soils approximates the grape's native conditions in Gallura, northern Sardinia. A short 5 day soak on skins gives richness and texture without extraction, and as fermentation begins the wine is pressed to large neutral oak (500L DAMY puncheons) for 12 months on full lees without racking or stirring. It yields a textural, saline white wine that feels exotic and lush at just 11% ABV.


Acid Rosé


100% Organic Mourvèdre from Canowindra NSW. This year's Acid Rosé takes a new direction: a paler, salmon-colored, Bandol-esque, direct-pressed Mourvèdre. We have been admiring the Mourvèdre at Rosnay for years, the fruit in that block has always looked so perfect and is undoubtedly well suited to the soil and climate. That, and our love for the dry and savoury rosés of Bandol and Cassis inspired this wine which true to style and grape, is a gourmand, food friendly wine - less fruity and more dry, savoury and with a lovely granite tension. 12.5% ABV.


Acid Shiraz


100% Organic Shiraz from Canowindra, NSW. Destemmed and sealed for 3 weeks without punchdowns or pump-overs, this Shiraz is light and silky with a lovely cherry note and an intriguing aniseed bitterness. A slippery red that performs as well chilled and in the sunshine as it does by the fireplace. 12% ABV.
